SIPS // The Chicago Fizz
Having just spent the weekend in the Windy City, I thought it appropriate to share this classic cocktail with you guys. Made famous by the bar that served it, this classic fizz recipe once appeared in New York’s Waldorf-Astoria bar.
Chicago Fizz
1 oz port
1 oz dark rum
0.75 oz lemon juice
0.75 oz simple syrup
One half of an egg white
Soda water
Combine all ingredients except soda water in a shaker without ice. Dry shake, add ice and shake hard. Fine strain into a Collins glass without ice. Top with soda water.
*To make simple syrup: Use 1 part water to 1 part sugar. Bring water to a boil. Dissolve sugar in water completely. Remove from heat and let cool before bottling.
