I’m anxiously awaiting the arrival of those tiny little cookies made of mint and chocolaty goodness. While I wait semi-patiently for the Girl Scouts to deliver my favorite sweet, I thought up a similar version of the thin mint that will satisfy the craving for now. A tad more bitter than the original, with a crunchier texture – but delicious nonetheless. The best part about this – it’s a three ingredient recipe and takes almost no time to make!

1 pkg of chocolate wafers
1 pkg of semi-sweet chocolate (i used bakers chocolate)
1 teaspoon of mint extract
Melt the chocolate in the microwave. Mix in the mint extract. Dip the wafer in the melted chocolate. Let cookie sit on parchment paper until chocolate is dry.
As a fan of frozen thin mints, I highly recommend letting these sit in the freezer for an hour before eating.
